- Manage the daily preparation and production operations
- Ensure that all activities conform to HAACP standards, NEA, and AVA guidelines
- Schedule and coordinate the work of various production personnel to ensure that the food preparation and production process is cost-efficient.
- Responsible for the quality of all food items prepared in the production kitchen is as per company’s Standard Operating Procedures (SOP) and according to recipes.
- Perform mandatory checks on yield, taste, texture and require measurement of finished food product.
- Produce or directly supervise the cooking of production items that require skill-sets.
- Ensure that both preparation kitchen and production kitchen are staffed adequately for maximum productivity.
- Be constantly in touch with wholesale or main distributors on their new products which can improve the quality of food or lower the cost of produced goods or both.
- Ensure that all required food ingredients are ordered, stocked, and properly stored.
- Ensure that kitchen’s cleanliness and hygiene standards are maintained at all times.
- Maintain inventory of production equipment, and communicate any concerns or needs.
- Perform all reasonable request and to report to the Executive Chef pertaining to outcome or special variation of each food item and execution of events. This communication is to include performance of all individuals involved, quality and quantity of food prepared, and facility and equipment.
- At least 2 years of relevant experience in a similar capacity
- Communication skills, organization and ability to manage preparation and production teams
- Related certification and qualifications
